Enchiladas

These are pretty easy and flexible.
1 lb hamburger
1 can enchilada sauce (or make your own- see below)
1 8 oz. can tomato sauce
chopped onion or onion powder
1 can refried beans
shredded cheese
tortillas
Optional Ing. - olives, green peppers, jalapenos, etc.
Sauce if making your own:
Instead of 1 can tomato sauce as called for above you will need two. Pour one and a half cans in a bowl and mix with Italian seasoning, garlic powder, salt and pepper, and parsley. (Feel free to spice it up however you like this is just what I use.)
Scramble hamburger with onions. Drain. Mix enchilada sauce and tomato sauce. Add 1/3 tomato sauce mixture and other ingredients. Place in tortillas and top with the rest of the sauce and cheese. Bake at 350 for 15 minutes.

I use the same recipe...but for a shortcut on making your own enchilada sauce, I mix in a bit of taco seasoning into one can tomato sauce (depending on how you like your spice-level, depends on how much you use). Instead of adding enchilada sauce to the bean/meat mixture, I add salsa.
