Stir occasionally until dissolved.
In a five gallon bucket mix borax and soda with 1 gallon of hot water until dissolved. Add soap. Mix well. Add three more gallons of water and mix. Place lid on bucket and let it sit over night. Mix one more time. Use 1/4 - 1/3 cup each load. You may need to stir it occasionally because it can separate.

You will still need to use a stain remover or bleach when needed, but this is a very inexpensive basic laundry detergent.

Just to make life easier – get an old grater and an old pan. Use these only for making detergent. Otherwise you will be scrubbing them a few times to get all the soap off.

With a box of soda and borax and a few bars of Fels Naptha, you can have a year supply of detergent sitting on a shelf AND it doesn’t take up a lot of room!

Croissants

2 pkgs. active dry yeast

1 1/2 c. warm water, 105 to 115 degrees
1 c. nonfat dry milk
1 tbsp. granulated sugar
1 1/2 tsp. salt
2 eggs
5 c. all-purpose flour
1/4 c. melted butter
1 c. firm butter, sliced
1 egg, beaten with 1 tbsp. water

1. This recipe is quick and really easy.

Jaden’s Chinese Beef Broccoli (from The Steamy Kitchen Cookbook)

SERVES 4 AS PART OF MULTICOURSE MEAL

1 lb (500 g) top sirloin or flank steak, thinly sliced into 1/8-in (3-mm)-thick strips

11/2 lbs (750 g) broccoli, cut into bite-size florets

1 tablespoon high-heat cooking oil

1 tablespoon minced garlic

BEEF MARINADE

1 1/2 teaspoons soy sauce

1 teaspoon cornstarch

1/2 teaspoon cooking oil

Freshly ground black pepper to season the beef

STIR-FRY SAUCE

3 tablespoons oyster sauce

2 teaspoons Chinese rice wine (or dry sherry)

2 teaspoons Chinese black vinegar (or balsamic vinegar)

1 In a bowl, combine the ingredients for the Beef Marinade. Add the beef and let mari- nate for 10 minutes at room temperature.

2 In a small bowl, mix together the ingre- dients for the Stir-fry Sauce.

3 In a wok or large sauté pan, add 1 inch (2.5 cm) of water and bring to a boil. Add the broccoli and cover to steam for 3 minutes. The broccoli should be bright green, crisp tender and you should be able to pierce the stem with a fork. Drain.

4 Discard the water in the pan and dry the pan well. Set the pan over high heat and when hot, add the high-heat cooking oil and swirl to coat. Add the garlic and fry for 15 to 30 seconds, until fragrant. Add the steak strips, keeping them in one layer and fry 30 seconds. Flip the strips and fry the other side.

5 Pour in the Stir-fry Sauce and stir to combine. Simmer until the sauce is thick enough to coat the back of a spoon, about 30 seconds. Add the cooked broccoli back into the pan and toss to coat well.

Chocolate Marshmallow Cake

CHOCOLATE MARSHMALLOW CAKE
1 cup boiling water
2 cups sugar
1 3/4 cups flour
3/4 cup cocoa powder
2 tsp baking soda
1 tsp baking powder
1 tsp salt
2 eggs
1 cup buttermilk (or use 1 cup milk mixed with 1 Tbl vinegar)
1/2 cup oil
1 tsp vanilla

Chocolate Satin Frosting (see recipe below)

1. Heat the oven to 350 degrees and grease a 13x9 pan.

2. Bring some water to boil and keep it simmering while you make the batter.

3. In a large mixing bowl, combine the sugar, flour, cocoa, baking soda, baking powder, and salt. Add the eggs, buttermilk, oil and vanilla and beat with an electric mixer for 30 seconds.

4. Add the 1 cup boiling water and carefully stir until the water is mixed in; beat for 1 1/2 minutes.

5. Pour the batter into the 13x9 pan (batter will be thin).

6. Bake at 350 for 35-38 minutes or just until the top springs back when lightly touched.

7. Make the frosting while the cake is baking. When the cake is done, pour the warm frosting over the hot cake.

CHOCOLATE SATIN FROSTING

1/2 cup butter
6 Tbl buttermilk (or use 6 Tbl milk mixed with 1 tsp vinegar)
4 Tbl cocoa powder
1 (16 oz) box powdered sugar
1 tsp vanilla
2 cups marshmallows (optional) - we did use these, but it was really sweet

1. In a medium saucepan, combine the butter, buttermilk and cocoa. Cook, stirring constantly, just until it comes to a boil; remove the pan from the heat.

2. Add the powdered sugar and vanilla, and beat with a wooden spoon or electric mixer until the frosting is nearly smooth (stir every few minutes while the cake finished baking).

3. Add the marshmallows, then pour the warm frosting over the hot cake, gently spreading until it covers the cake evenly. Heat, stirring, to boiling, then continue
to cook using a candy thermometer to monitor the temperature.
Beat the egg whites until they are stiff and form peaks. Don't use a
plastic bowl for this. When the sugar solution comes to 270 degrees F,
or the soft-crack stage, remove from the heat and pour the mixture in
thin streams into the egg whites, blending completely with a mixer set
on low speed. Continue to mix until the candy begins to harden to the
consistency of dough. This may take as long as 20 minutes. At this point
add the semisweet chocolate chips. Remember that the candy must
already be at the consistency of dough when you add the chocolate;
the nougat will thicken no more after the chocolate is added.
When the chocolate is thoroughly blended and the nougat has thickened,
Press it into a greased 9x9-inch pan. Refrigerate until firm, about 30
minutes. With a sharp knife, cut the candy in half down the middle of
the pan. Then cut across into 7 segments to create a total of 14 bars.
Melt the milk chocolate chips in the microwave for 2 minutes on half
power, stirring halfway through the heating time. Melt completely, but
be careful not to overheat. Resting a bar on a fork dip each bar into
the chocolate to coat completely and place on wax paper.
Cool until firm at room temperature, 1 to 2 hours. Makes 14 candy bars.

Creamy Chicken Pasta

This can be done in a crock pot or on the stove.

2 Cans Cream of Chicken

1 Cup Shredded Chicken

8 Oz Cream Cheese

Italian Dressing Packet or Italian Seasoning

Put all ingredients into crockpot (or on the stove) and cook until smooth. All you need are three ingredients...how easy is that?

12-15* small red potatoes(leave skins on), washed and cubed (you can also use Russet potatoes, just not as many, and I peel the Russet potatoes)
2 TBSP olive oil (I have substituted melted butter and it works okay as well)
1 pkg onion soup mix

Preheat oven to 350 degrees. While oven is preheating, scrub and cube potatoes. Use either an 8 x 8 or 12 x 8 inch baking dish. Spray pan with non-stick cooking spray. Place cubed potatoes in dish and pour oil, or melted butter, on potatoes. Mix until potatoes are covered. Sprinkle onion soup mix on potatoes and then mix really well. Bake for 45 minutes, or until potatoes are fork tender. Enjoy!

*Okay, I have to admit I don't measure everything I use when I cook. If you find that this is too many potatoes, accommodate to what the pan allows. Your pan should be about 2/3 full of cubed potatoes. Every time I made them, people asked for the recipe. I have changed the recipe a bit, and they are even better! I hope you enjoy them!

1 cup margarine, softened
1 cup white sugar
1 cup brown sugar
2 eggs
1 tsp vanilla
1 tsp baking soda
1 tsp salt
3-3 1/4 cups flour
2 cups chocolate chips

Preheat oven to 350 degrees. Cream the margarine. Add the sugars and cream really well (for a couple of minutes). Add the eggs and vanilla and cream again (1 minute). Add the baking soda and salt. Add the flour--I add enough that I can roll rounded teaspoonfulls in my hand without getting overly sticky--the batter/dough will be very thick. Add the chocolate chips. You can either roll rounded teaspoonfulls in your hand, or just drop rounded teaspoonfulls on a lightly greased cookie sheet. Bake for 10 minutes. After they are cooled, keep them in a tightly covered container. I hope you enjoy these!

Cracker Jack

(This is a non-sticky carmeled popcorn recipe-so so tasty!)

Popcorn

1 Cup Brown Sugar

1/2 Cup Butter

1/4 Cup Karo Syrup

Brown Paper Bag from grocery store

Pop about 3 batches of popcorn (approx. 1/3-1/2 of a brown paper bag).

Mix Sugar, Butter, and Syrup. I've experimented a bit with this recipe, too, with regards to trying to come up with a semi-healthy treat. I'll give you the recipe and then at the bottom give you the different variations I've tried.

2 cups flour
1 1/4 cups sugar
1 tsp salt
1 1/2 tsp baking soda
1/2 cup cocoa
2 cups shredded zucchini
1/2 cup oil
2 tsp vanilla
1/2 cups nuts (optional)
**

Sift dry ingredients together. Add oil, squash, vanilla, and nuts. Spread batter into greased cookie sheet. Bake for 18-20 minutes at 350 degrees. Frost, if desired. You can also spread batter in a 9"x13" cake pan, for more of a cake-like brownie. You'll have to increase the cooking time to 25-30 minutes.

Chocolate Frosting
1/3 cup butter or margarine
1/3-1/2 cup cocoa (depending on if you like more or less chocolatey taste)
1 tsp vanilla
dash of salt
2-4 TBSP milk
powdered sugar (2-3 1/2 cups)

Cream the butter well. Add the cocoa, vanilla, salt, and milk. Cream well again. Add powdered sugar 1/2 cup at a time, mixing well after each addition. Depending on the consistency you want in your frosting, determines how much powdered sugar to add. I like my frosting thick, when the beaters leave a definite shape while beating, then its thick enough for me. Use your own judgement (sorry, not real helpful, but that's how I mkae a lot of things). Frost brownies and cover.

My changes:

**For some reason, I always need to add a little milk to the brownie batter because it isn't quite moist enough. I usually add 1/3 cup milk.

I have also substituted applesauce for the oil. It makes the brownie slightly sticky to touch, but if you frost the brownies, there isn't a big difference.

I have also substituted whole wheat flour for part of the regular flour. I've only done half and half so far, but next time I make them, I'll try doing them completely with whole wheat flour.

And, I have combined the two substitutions--the applesauce and the wheat flour, and they really aren't too bad. But, I always frost them, so that kind of takes away the whole trying-to-be-healthy deal. Oh, well, some healthier substitutions are better than none!

Cheesy Vegetable Soup

This is the easiest and quickest soup ever--plus it tastes great! Lightly coat the bottom and sides of an 8-inch springform pan with nonstick cooking spray. Pour the crumbs into the pan and, using the bottom of a measuring cup or the smooth bottom of a glass, press the crumbs down into the base and 1-inch up the sides. Refrigerate for 5 minutes.

For the Filling: In the bowl of an electric mixer, beat the cream cheese on low speed for 1 minute until smooth and free of any lumps. Add the eggs, 1 at a time, and continue to beat slowly until combined. Gradually add sugar and beat until creamy, for 1 to 2 minutes. Add sour cream, lemon zest, and vanilla. Periodically scrape down the sides of the bowl and the beaters. The batter should be well mixed but not over-beaten. Pour the filling into the crust-lined pan and smooth the top with a spatula.

Set the cheesecake pan on a large piece of aluminum foil and fold up the sides around it. Place the cake pan in a large roasting pan. Pour boiling water into the roasting pan until the water is about halfway up the sides of the cheesecake pan; the foil will keep the water from seeping into the cheesecake. Bake for 45 minutes. The cheesecake should still jiggle (it will firm up after chilling), so be careful not to overcook. Let cool in pan for 30 minutes. Chill in the refrigerator, loosely covered, for at least 4 hours. Loosen the cheesecake from the sides of the pan by running a thin metal spatula around the inside rim. Unmold and transfer to a cake plate.

Recipe from Tyler Florence, Food Network

I made this for Kyler's Birthday and people seemed to enjoy it.

Enchiladas

These are pretty easy and flexible.

1 lb hamburger

1 can enchilada sauce (or make your own- see below)

1 8 oz. can tomato sauce

chopped onion or onion powder

1 can refried beans

shredded cheese

tortillas

Optional Ing. - olives, green peppers, jalapenos, etc.

Sauce if making your own:

Instead of 1 can tomato sauce as called for above you will need two.
